Compote for porridge

So I will admit that I started this by trying to make a jam inspired by Lauren McDermotts jam recipe on her instagram but it didn’t set for me so I made into a compote!
I thought I would share my method of making compote as we make it a lots with frozen fruit and its so easy and much cheaper than buying it, and my biggest win is that you can reduce the sugar SO much.

A basket of damson plums


For a compote I generally use:
1kg fruit, often a big bag of frozen berries or whatever I have
This time I used damson plums chopped and blackberries
Sugar - I use as little as possible, usually by eye by maybe unto 200g depending on your taste, I like to use a soft brown sugar
Lemon juice from 1 lemon

Additions:
Chia seeds
Cinnamon
Honey

Throw it all in a saucepan with a little bit of water and cook down for 15-20 mins on a low-med heat.

We usually add to yogurt or porridge for breakfasts and you could add more honey to taste here.
